Three Breakfast Casseroles Perfect For Sunday Brunch

Casseroles are a perfect way to get up on a Sunday morning. With simple ingredients mixed in your crockpot overnight, to a burst of heavenly aroma in the morning, you are sure to be on a roll every morning. Here are three casseroles you should try.

Breakfast Enchiladas

Enchiladas should not be reserved for dinners. They are perfect ingredients for a morning meal. This casserole is packed with Mexican flavours.  The dish is prepared with salsa verde, red bell peppers, chopped avocado, and fresh cilantro. This casserole is a crowd-pleaser and is prepared simply. Start by removing the eggs from the stove when they are soft boiled. Do not worry as they will be fully cooked in the oven. Cover then chill the casserole. Leave the mixture at room temperature for 20 minutes before baking.

Croissant and Cheesy Sausage Casserole

The taste of this casserole is sure to bring a cheer on a Christmas morning or a Thanksgiving brunch. The casserole’s goodness comes packed with Gruyère cheese combined with a nutty flavour. You can settle for Swiss cheese. Cook some sausage in a frying pan. Cut them into pieces. Slice open some croissants from your favourite bakery and place them cut-side up in a baking dish. Cover the croissants with the sausage pieces, chopped peppers, onion slices, and mushrooms. Sprinkle liberally with shredded or slices of Gruyère cheese. Pop this in the oven until the cheese bubbles.

Red Pepper, Ricotta Frittata, and Potato Casserole

This casserole has an Italian touch with a combination of quiche and omelette. Whisk 6 eggs and add chopped red bell pepper. Mix in diced chives, creamy ricotta cheese, fresh parsley, and crispy potato wedges. You can also consider adding summer tomatoes, savoury bacon, and dried rosemary. Bake it for about 20 minutes and let it cool overnight. Warm it in the oven in the morning for about 15-20 minutes. You will be greeted a burst of deliciousness in the morning, a perfect way to start your day.
